Another Yummy Recipe “Tangerine and Fennel Glazed Walnuts”~by The Lunch Lady

I am preparing to cater a fabulous dessert party this week, and one element of one of the desserts is so fabulous, I just had to share! I am using these glazed nuts to top tangerine mousse napoleons. I hope you find a delicious way to incorporate them into a meal or dessert in your home soon and let me know what you think!


2 Cups Toasted Walnuts
3/4 Cup Sugar
1/4 Cup Tangerine Juice
Zest of 1 Tangerine
1 Tablespoon fennel seeds

Combine tangerine juice, sugar, and zest in a heavy bottomed saucepan

Over medium heat, cook to “hard Crack” stage on a candy thermometer, stirring constantly

Immediately add walnuts and fennel seeds, stir until nuts are just coated

Turn out onto a baking sheet lined with parchment and spread out using a spatula

Allow to cool
Chop if desired, sprinkle on ice cream, salad, or just for a sweet snack!
